Ingredients:
- ¼ cup flour
- 1 egg, beaten
- 3 tbsp. grated Parmesan cheese
- 1 tbsp. fresh dill, chopped
- 1 tbsp. fresh parsley, chopped
- ½ tsp. salt
- ø tsp. pepper
- 1 cup zucchini, grated
- 1 small onion, grated
- ¼ cup olive oil for frying
Direction:
- In a large bowl, combine flour, egg, cheese, dill, parsley, salt, and pepper.
- Mix in grated zucchini and onion.
- In a large skillet, heat oil until very hot, but not smoking.
- Drop mixture into hot oil one tablespoonful at a time.
- Fry each fritter for about 5 minutes on each side, or until it is golden brown.
- Use a spatula to transfer fritters to a plate lined with paper towels and allow to drain.
- Serve hot.
